Caroline has taken the delicious citrusy and spiced flavours of the well known and loved carrot cake and turned them into a nutritious, yummy power snack. All the goodness of carrot cake.. without the guilt!
Ingredients
- Gluten free porridge oats
- Carrot (peeled and grated)
- Walnuts
- Raisins
- Cinnamon
- Vanilla
- Ground cloves
- Orange zest and juice
- Desiccated coconut (for rolling!)
Method
- Add all ingredients into a food processor and blend!
- Form balls with the dough and coat them in desiccated coconut
Top Tip
Play around with the consistency of the mixture until you find the perfect balance for you. If it’s too wet, add more nuts or oats. Too dry, add raisins!
