Whip up these chewy healthy bars of loveliness in just a few minutes. Perfect as a healthy dessert or for lunch boxes, snacking on the go, or that mid afternoon slump we all get from time to time!
1 cup Apricots, chopped
1 cup Pecans, chopped
1 cup Medjool Dates, chopped
Grated Zest and Juice of half a Lemon
2 tsp Buckwheat Flakes
2 tsp Millet Flakes
2 tsp Coconut Oil, melted
2 tsp Cashew Butter
Blend all ingredients together, form into a bar on top of baking parchment. Refrigerate for at least an hour then slice. Told you it was easy!
If you don’t have any of the ingredients this recipe can be adapted to whatever you do have. It works well with oats, almonds, cranberries and seeds too.
